    - 3 1/2 lb lean pork tenderloin
    - 3/4 tsp grated lemon rind
    - 1/2 tsp salt
    - 1/2 tsp ground cumin
    - 1/4 tsp pepper
    - 3 garlic cloves - minced
    - 1 cup low-salt FF chicken broth

    Trim fat from pork (I didn't bother). Combine next 5 ingredients in a small bowl, mix well and rub evenly over pork.

    Stick meat thermometer into pork and place pork in an 11 x 7 inch casserole, add broth to dish. Bake at 400 degrees for 30 minutes. Turn pork over and bake an additional 30 minutes or until thermometer registers 160 degrees. Discard broth.

    Yields: 12 servings
    109 calories, 4g fat, trace fiber which is basically 2.5 pts per serving.
