    List of Ingredients




    2 teaspoons oive oil
    1 pound Italian turkey sausage, cut into 2 inch pieces
    1 green bell pepper, seeded and cut into 1/2 in wide strips
    1 red bell pepper, seeded and cut into 1/2 in wide strips
    1 onion, sliced
    2 garlic cloves, chopped
    3/4 pound red potatoes, peeled and cut into 1 inch cubes
    1 ( 15 oz.) can tomato sauce
    1/2 cup water
    1 teaspoon dried oregano

    Recipe



    1. Heat 1 tsp. of oil in a large nonstick skillet over medium-high heat. Add the sausage and cook, turning occasionally, until browned, about 5 minutes. Transfer to a bowl and set side.

    2. Add the remaining 1 tsp. oil to the same skillet, then add green and red bell peppers, the onion and garlic. Cook over medium heat, stirring occasionally, until the peppers and onion begin to soften, about 8 minutes.

    3. Return the sausage to the skillet. Add the potatoes, tomato sauce, water, and oregano; bring to boil. Reduce the heat and simmer, covered stirring occasionally, until the flavors are blended, the sausage is cooked through, and the vegetables are tender, about 25 minutes.
