Recipe Introduction
Each serving is 8 points, but I only eat half for dinner and save the other half for lunch. Also, we use the Success brown rice, which has 2 servings per bag and is very easy to prepare (boil in the bag).
List of Ingredients
4 oz. lean pork, cubed
1/2 large red or yellow pepper, chopped
1 1/2 T peanuts, chopped
1 C sugar snap peas (I use Green Giant boxed/frozen - 2 servings per box)
1 T soy sauce
1/4 t corn starch
Crushed red pepper or flakes to taste (I use about 1/4 t per serving)
1 t ground ginger
3/4 C brown rice Recipe
1. Mix soy sauce, corn starch and red pepper in a bowl; add pork to marinate.
2. Spray non-stick pan with cooking spray, and cook pork until almost done. Remove from pan.
3. In same pan, add peppers, peas, peanuts and ginger. Saute until vegetables are cooked to your liking. Add pork and cook until warm. Serve with brown rice.
