    Weight Watchers and Nek

    Recipe Introduction

    Servings | 4
    Points / 7
    Prep time: 20 minutes
    Cook time: 15 minutes

I got it down to 6 points by using
    1 T butter and spray
    2 nectarines
2 T flour (cuz there was plenty left over

Depending on the size / ounces of the chicken breast it may be less. I'm not sure what the weigh is in the recipe builder. I ate 1/3 of a huge (Purdue) chicken breast last night.

    List of Ingredients

2 boneless, skinless chicken breasts (4 halves / pieces)
    3 Tbsp all-purpose flour
    1/2 tsp table salt
    1/2 tsp black pepper
    2 Tbsp butter
    3/4 cup fat-free chicken broth
    2-3 medium nectarine / peaches
    1 medium red onion, sliced
    1/4 tsp lemon zest
    8 leaves fresh basil
    1/2 C cooked rice

    Recipe

Peel & slice peaches/ nectarines, set aside
Peel & slice onion into med slices, sed aside
    Chiffonade basil leaves, set aside

On wax paper, combine flour, salt & pepper chicken breasts. Coat chicken with seasoned flour. Reserve extra flour.

In a non stick pan melt butter over medium heat. Add chicken and cook 10-12 mins, turning once, until juices run clear. Transfer to a platter; keep warm.

Whisk in some of the resereved flour to drippings in skillet, add chicken broth, heat to boiling over high heat. Add sliced necterines/ peaches, red onion and lemon
zest. Cook, stirring frequently, about 3 minutes until peaches soften and sauce is slightly thick. Stir in
    slice basil and serve immediately.

Serve over cooked rice with sauce.

    Notes:
*Servings based on 1/2 chicken breast per person
*Can use peaches or nectarines. I prefer nectarines. Peeling optional.
    *serve over rice or noodles
*Be careful not to overcook the peaches & onions. They should have a little firmness left to them.
