Recipe Introduction
Makes about 12 cups, 1 pt. per serving.
List of Ingredients
2 zucchini, large dice
1 pint mushrooms, large dice
2 onions, large dice
4 cloves garlic, finely chopped
2 large red bell peppers, large dice
1.5 pounds tomatoes, large dice
35 oz. canned tomatoes, with their juice
2T chili powder
1 T cumin
1 T basil
1 T oregano
2 tsp. black pepper
1 tsp salt
½ c. chopped flat-leaf parsley
1 can dark red kidney beans, rinsed
1 can garbanzo beans, rinsed
1 can black beans, rinsed
½ cup chopped fresh dill
2 T fresh lemon juice
Recipe
Using nonstick spray, saute first two ingredients in a skillet 5-7 minutes, transfer to large cooking pot. Saute next three ingredients about 10 minutes, transfer to pot. Turn pot on low heat, add next 9 ingredients, and simmer for 30 minutes, stirring often. Add last 5 ingredients and cook 10 minutes.
Can serve with chopped scallions and nonfat plain yogurt (½ pt for 4 tablespoons)
You can add grated cheese (adds pts), and you can add different veggies, like carrots, etc. whatever you choose.
