BACON TWICE-BAKED POTATOES

Serves 4...serving is 1 whole potato

List of Ingredients
4 potatoes....baked and cooled slightly
1 Cup FF Sour Cream
3/4 Cup FF shredded, cheddar cheese
Salt and Pepper...to taste
3 Slices Canadian Style Bacon, chopped and cooked until crisp
3 green onions....chopped...white and green parts
Recipe
Slice potatoes lengthwise...scoop out center...reserve skins. Put potatoes in bowl and add sour cream and cheese, salt and pepper....stir....add bacon....stir until bacon is mixed throughout...add onions....stir....scoop 1/4 of mixture in each potato skin. Place potatoes on a non-stick baking sheet and bake at 450'. until heated and cheese is melted...about 8 min.
Great left-over and also a great lunch.
