Black Bean-Brown Rice with a Southwester

1 cup uncooked brown rice
2 cup water
2 Beef Bouillon cubes or more to taste
1 tsp minced garlic
¼ medium green pepper, diced
¼ medium onion, diced
8 oz can diced tomatoes with Jalapenos
15 oz can black beans, rinsed and drained
1 tsp ground cumin
Recipe
Place rice, water, bouillon cubes, cumin and garlic in a small saucepan. Bring to a boil and simmer until rice is tender. Add more water if needed so that there is always some in the pot. Cook until rice is tender.
Add pepper, onion, tomatoes and beans. Heat until boiling and then simmer for about 10 minutes being careful not to burn the rice.
