Gene Hackman's Steak Diane
List of Ingredients
1 lb. center cut beef tenderloin
1 clove garlic, cut
4 tbsps. sweet butter
2 tbsps. brandy
3 tbsps. parsley, minced
1 tbsp. Worcestershire sauce
salt to taste
freshly ground pepper to tasteRecipe
1. Cut steak into 1-inch strips.
Flatten by pounding to 1/16-inch thickness
2. Rub strips lightly with cut garlic
3. Heat 2 tbsps. butter in skillet until foaming.
Brown meat quickly on both sides.
4. Add heated brandy to meat.
5. Add the remaining butter, Worcestershire, salt and pepper to taste.
Stir well and heat.
6. Serve at once; garnish liberally with parsley
* If desired, omit brandy and substitute minced fresh chives, mushrooms, instead.
