    Joey Heatherton's Pray Thee Pie

    List of Ingredients




    For Topping:
    4 large potaotes, peeled
    3/4 cup milk
    1/2 stick sweet butter
    1 tsp. salt
    1/16 tsp. freshly ground black pepper


    For Meat Layer:
    3 small yellow onions, chopped
    1 tbsp. beef drippings from roast beef or sweet butter
    1 large clove garlic, minced
    1-1/2 lbs. chopped lean sirloin
    2 tsps. beef extract or 1 tbsp. undiluted consomme
    1 tsp.salt
    1/4 tsp. freshly ground pepper
    5 tbsps. water

    Recipe



    1. Cook peeled potaotes until tender. Drain well.

    2. Mash until very light; add milk, butter and seasonings

    3. Beat again until light. Add more milk if necessary

    4. Saute onion in melted beef drippings until golden

    5. Add garlic and cook 1 minute over low heat, stirring.

    6. Stir in meat; brown lightly

    7. Add beef extract, seasonings, and water. Stir lightly to mix.

    8. Cover loosely with lid and steam slowly 7 minutes.

    9. Turn meat mixture into a well-butter pie dish.
    Top with layer of hot mashed potaotes.
    Dot top with butter and sprinkle lightly with freshly ground pepper.

    10. Bake uncovered in 400* oven for 30-35 minutes, or until light brown.
