Lena Horne's Cancerian Beans
List of Ingredients
2 cups (about 1 lb.) large black beans
5 cups of water
1 tsp. salt
1/2 cup olive oil
2 large garlic cloves, pressed
1 onion, peeled and sliced
8 small, fresh tomatoes, peeled and chopped
Freshly ground black pepper to taste
Smoked ham hocks ( cooked in water until tender)Recipe
1. Pick and clean beans and soak overnight
2. Drain. Place beans in large saucepan with water. Water should cover beans by about 1-1/2 inches.
3. Add salt, cover and cook until beans are 'bitey' (about 1-1/2 hours)
4. Prepare sauce while beans are cooking; heat 2 ybsps. olive oil in skillet.
Saute garlic and onion until tender.
Add tomatoes.
Cook slowly over low fire to form thick, soft sauce.
5. Place cooked, drained beans in a casserole dish.
Spoon sauce over top and heat until piping hot.
6. Drizzle remaining olive oil over top and sprinkle pepper to taste.
7. Serve with sliced cooked ham hocks to complete meal
