County Coconut Pie
List of Ingredients
3/4 cup soft margarine or butter
1 cup sugar
2 eggs
1 tbsp. all-purpose flour
1 tbsp. vanilla
1 cup buttermilk
1/2 cup flaked coconut
1 (9-inch) unbaked pieshell
Recipe
Cream butter and sugar until light
Beat in eggs and flour
Add remaining ingredients, mixing well, and pour into unbaked pieshell.
Mixture will look curdled.
Bake in 450* oven for 10 minutes; reduce heat to 300* and bake about 30 minutes more, or until firm.
Serve warm or cold
