Glazed Lemon Squares
Bite sized lemon treats.
List of Ingredients
- 1 cup/250 mL sifted all-purpose flour
- 1/4 cup/50 mL powdered sugar
- 1/8 tsp/0.6 mL salt
- 1/8 tsp/0.6 mL Watkins Nutmeg
- 1/2 cup/125 mL butter or margarine

- 1/2 cup /125 mL granulated sugar
- 2 tbsp/30 mL Watkins Lemon Dessert Mix
- 1/2 tsp/2.5 mL Watkins Baking Powder
- 2 eggs, slightly beaten
- 2 tbsp/30 mL water
- ======
- 1/2 cup/125 mL powdered sugar
- 1/2 tsp/2.5 mL Watkins Lemon Extract
- 1 tbsp/15 mL melted butter
- /2 to 1 tbsp/7.5 to 15 mL water
Instructions
- Combine flour, powdered sugar, salt and nutmeg in mixing bowl. Cut in butter until mixture forms a soft dough. Press into a greased 8 x 8 inch/20 x 20 cm baking pan. Bake at 325º F/170º C for 15 minutes.
- Mix sugar, Lemon Dessert Mix, baking powder, eggs and 2 tbsp/30 mL water; spread over baked layer. Return to oven and bake about 25 minutes.
- Cool.
- To make Lemon Glaze, blend remaining ingredients until smooth.
- Spread glaze over baked layers, cut into squares.
- Makes 2-1/2 dozen bars.
