    Glazed Lemon Squares

    Bite sized lemon treats.


    List of Ingredients


    • 1 cup/250 mL sifted all-purpose flour
    • 1/4 cup/50 mL powdered sugar
    • 1/8 tsp/0.6 mL salt
    • 1/8 tsp/0.6 mL Watkins Nutmeg
    • 1/2 cup/125 mL butter or margarine
    • ======
    • 1/2 cup /125 mL granulated sugar
    • 2 tbsp/30 mL Watkins Lemon Dessert Mix
    • 1/2 tsp/2.5 mL Watkins Baking Powder
    • 2 eggs, slightly beaten
    • 2 tbsp/30 mL water
    • ======
    • 1/2 cup/125 mL powdered sugar
    • 1/2 tsp/2.5 mL Watkins Lemon Extract
    • 1 tbsp/15 mL melted butter
    • /2 to 1 tbsp/7.5 to 15 mL water


    Instructions


    1. Combine flour, powdered sugar, salt and nutmeg in mixing bowl. Cut in butter until mixture forms a soft dough. Press into a greased 8 x 8 inch/20 x 20 cm baking pan. Bake at 325º F/170º C for 15 minutes.
    2. Mix sugar, Lemon Dessert Mix, baking powder, eggs and 2 tbsp/30 mL water; spread over baked layer. Return to oven and bake about 25 minutes.
    3. Cool.
    4. To make Lemon Glaze, blend remaining ingredients until smooth.
    5. Spread glaze over baked layers, cut into squares.
    6. Makes 2-1/2 dozen bars.
