Excellent winter soup
List of Ingredients
6 c diced potatoes ( I buy the diced potatoes at Fred Meyers in the freezer section.)
1 large onion, chopped
2 cans cream of chicken soup
2 c milk
1 lb Velveeta cheese
Salt and pepper to taste
Recipe
Place the potatoes and choped onions in a large saucepan and cover with water. Boil until tender. Add chicken soup, milk and cheese. Cook over med to low heat until the cheese is melted. (The cheese has a tendency to stick , so stir often.) Add salt and pepper to taste.
I serve this with corn muffins.
