OLD FASHIONED OATMEAL COOKIES
I have used this recipe for many, many years. They disappear so quickly that I always make a double batch. These freeze well if you can keep them around long enough!! Makes 6 to 7 dozen cookies.
List of Ingredients
- 1 cup raisins
- 1 cup water
- 3/4 cup shortening
- 1-1/2 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 2-1/2 cups all purpose flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves ( I use allspice )
- 2 cups rolled oats
- 1/2 cup chopped nuts
Instructions
- Simmer raisins and water in saucepan over low heat until raisins are plump,20 to 30 minutes. Drain raisin liquid into measuring cup. Add enough water to make 1/2 cup.
- Heat oven to 400 degrees ( moderate hot ). Mix shortening, sugar, eggs and vanilla. Stir in raisin liquid. Stir together flour, baking powder, baking soda, salt and spices; blend in. Add rolled oats, nuts and raisins. Drop rounded teaspoonfuls of dough about 2 inches apart on ungreased baking sheet. Bake 8 to 10 minutes or until lightly browned.
Final Comments
Sometimes I mix in 1/2 cup of semi-sweet chocolate chips with the oats, nuts and raisins. Mmmm !!!
