    CARROT RAISIN SALAD

    This is a great recipe for anyone, not just diabetics. Makes 8 servings.


    List of Ingredients


    • 4 cups shredded carrots ( 4 to 5 large )
    • 1 cup raisins
    • 1/4 cup salad dressing
    • 2 tablespoons sugar ( I use Equal, Nutrasweet, etc. )
    • 2 to 3 tablespoons low fat or skim milk


    Instructions


    1. Place carrots and raisins in a bowl.
    2. In another bowl, mix together salad dressing, sugar and enough milk to reach a salad dressing consistency.
    3. Pour over carrot mixture and toss to coat.
