CARROT RAISIN SALAD
This is a great recipe for anyone, not just diabetics. Makes 8 servings.
List of Ingredients
- 4 cups shredded carrots ( 4 to 5 large )
- 1 cup raisins
- 1/4 cup salad dressing
- 2 tablespoons sugar ( I use Equal, Nutrasweet, etc. )
- 2 to 3 tablespoons low fat or skim milk
Instructions
- Place carrots and raisins in a bowl.
- In another bowl, mix together salad dressing, sugar and enough milk to reach a salad dressing consistency.
- Pour over carrot mixture and toss to coat.
