Beer and Potato Crisps
List of Ingredients
2 potatoes, pared and grated finely (about 3 cups)
1 egg
3 tablespoons flour
1 small onion, grated
2 green onions, green part only, minced
2 slices Canadian bacon, sauteed lightly and minced, or smoked ham
1 cup beer
2 tablespoons vegetable or olive oil
Salt and pepper, to taste
Sour cream or mustard sauce, for dipping
Recipe
Blend all ingredients in medium bowl. Heat nonstick griddle or large, shallow skillet to 425 degrees, adding some oil if desired (makes potatoes crisper). When hot, drop tablespoons of batter onto griddle and cook until bubbly and browned. Turn and brown other side. Serve with dab of sour cream or mustard sauce.
