Pan-Fried Onion Dip
List of Ingredients
2 large yellow onions
4 tablespoons (1/2 stick) unsalted butter
1/4 cup vegetable oil
1/4 teaspoon ground cayenne pepper
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 ounces cream cheese, room temperature
1/2 cup sour cream
1/2 cup good-quality mayonnaise
Cut onions in half through stem, then slice into 1/8-inch-thick half-rounds. This comes to about 3 cups onions.
Heat butter and oil in large saute pan over medium heat. Add onions, cayenne, salt and pepper, and saute for 10 minutes. Reduce heat to medium-low and cook, stirring occasionally, 20 minutes more, until onions are browned and caramelized.
Allow onions to cool. Place cream cheese, sour cream and mayonnaise in bowl of an electric mixer fitted with a paddle attachment. Beat until smooth. Add onions and mix well. Taste for seasoning. Serve at room temperature. Makes 2 cups.
