What a great way to get the family to eat zucchini! You’d never guess there’s squash in these snacks, but the zukes add wonderful texture. Wash the zucchini well and leave the skin on. If you want to add some zip, sprinkle 1 to 2 teaspoons red chile flakes into the batter.
List of Ingredients
Serves 6 to 8
3 cups grated zucchini
1 cup baking mix, such as Bisquick
1/2 cup finely chopped onion
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1 teaspoon garlic powder
1/4 teaspoon dried oregano
1/2 teaspoon salt
Freshly ground black pepper
1/2 cup vegetable oil
4 eggs, lightly beaten
1. Preheat oven to 350 degrees. Line a 9-inch-by-13-inch pan with quick-release foil. Combine all ingredients in a large bowl and mix vigorously with a wooden spoon until combined.
2. Spread in prepared pan and bake about 25 minutes, until golden brown. Let cool for 10 minutes, then cut into 36 squares. Transfer from pan to a serving platter; serve warm or at room temperature.
