Party Thighs

You will need 4-5 boneless, skinless chicken thighs per person.
Wash the thighs, pat dry with paper towels. Season the thighs with salt and black pepper, and any other spices that you like. Roll the thigh tightly and wrap with a slice of good bacon, skewer with a toothpick. Marinade the thighs for several hours or overnight. A good Sweet BBQ sauce makes a great marinade.
You might want to try wrapping a small section of pickled jalapeño pepper or a piece of green onion in the thighs as you roll them. The thighs are then cooked on a grill or in the pit. Cook the thighs until the bacon begins to crisp a little. The edges of the thigh will crisp a little too.
Serve with extra table bbq sauce for dipping.
