    Smoked Salmon Brine

    List of Ingredients







    1 cup pineapple juice
    1 cup deionized salt
    5 cloves minced/crushed garlic
    1/2 cup soy sauce
    1 cup water
    Instructions
    Marinate overnight. I prefer an alder smoke for this recipe. If fillets lay on brown kraft paper (inside of shopping bags) they have a very soft texture due to less drying. This is better for various types of salmon spreads and pate' A light smoke on kraft paper makes a good product for salmon fetticini.
