Ginger Ale Fruit Punch (for 50)
1 1/2 quarts lemon juice
1 1/2 quarts orange juice
6 quarts water
4 pounds sugar
1 quart pineapple juice
2 quarts ginger ale
Mix first five ingredients and let stand several hours in ice. Add 2 quarts of ginger ale and pour over lime or lemon ice. Serve in punch cups.
Punch for a Crowd
2 ounces (1/4 cup) citric acid powder (FRUIT FRESH)
2 quarts boiling water
5 cups sugar
5 quarts cold water
1 (46-ounce) can pineapple juice, chilled
1 (6-ounce) can frozen orange juice concentrate, thawed and undiluted
Combine citric acid and boiling water in a ceramic heatproof container; stir until citric acid dissolves. Let mixture stand 24 hours.
Combine sugar and 5 quarts cold water; stir until sugar dissolves.
Add citric acid mixture, chilled pineapple juice and orange juice concentrate; stir mixture well. Serve over ice.
Yield: about 8 1/2 quarts.
