Banana Bread
List of Ingredients
2 to 3 ripe bananas (depending on size)
1/2 Cup shortening
1 Cup sugar
3 Eggs, separated
1 Teaspoon baking soda
2 Tablespoons hot water
1/4 Cup chopped nuts (optional)
1 Teaspoon vanilla
1 3/4 Cups all-purpose flour
1/4 teaspoon salt
Recipe
Oven: 325 Degrees
Yield: 1 large loaf or 2 medium loaves
Mash bananas. Cream shortening, sugar and egg yolks and add to bananas. Add soda dissolved in hot water. Add nuts and vanilla. Sift flour and salt together and add to mixture. Fold in beaten egg whites. Bake 1 hour and 15 minutes in greased 9x5x3-inch loaf pan or 45 to 55 minutes in two greased 8x5x3-inch loaf pans.
