Banana Coconut Bread
List of Ingredients
3/4 cup sugar
1/4 cup shortening
2 eggs
1 cup mashed banana
1/2 cup shredded coconut, fresh or dried, unsweetened
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup chopped pecans or walnuts (optional)
Recipe
In a large bowl, combine sugar, shortening, and eggs; beat until light and fluffy. Add the mashed banana and coconut and stir to combine.Sift the flour with the baking powder, salt and baking soda.Add to the banana mixture and stir until smooth. Add the nuts if desired and stir again.
Pour the batter into a greased 9 by 5 by 3 inch loaf pan.
Bake in a 350 degree F oven till a cake tester comes out clean (60to 70 minutes). Remove from the oven and allow to cool in the pan;
Let it finish cooling on a wire rack. Slice and serve, or wrap in aluminum foil and store in the freezer.
