    2 cups yellow cornmeal

    1 tablespoon salt

    1 teaspoon baking soda

    6 eggs, beaten

    1/2 cup sliced jalapeño peppers

    2 medium onions, chopped

    16 ounces grated Cheddar cheese

    2/3 cup vegetable oil

    2 (16-ounce) cans cream corn

    2 pounds crawfish tail meat

    Preheat oven to 375 degrees. In a large bowl, combine cornmeal, salt and baking soda. In a separate bowl, combine beaten eggs with peppers, onions, cheese, oil, corn and crawfish, then combine this with dry ingredients. Mix well. Pour into a 9-by-13-inch baking dish and bake until golden brown, 50 to 60 minutes. Makes 12 servings.
