Florida Mango Bread
List of Ingredients
2 cups flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3 eggs, lightly beaten
3/4 cup oil
1 tsp. vanilla
1 1/4 cups sugar
2 cups diced mango
1/2 cup raisins
1/2 cup coconut
1 cup pecans or walnuts
Recipe
Sift flour, baking soda, cinnamon, and salt, make a well, and add the eggs, oil, vanilla, and sugar. Add the mango, raisins, coconut, and nuts. Mix together and let stand for 20 minutes. Pour into pans. Bake for 1 hour at 350 degrees. Makes 2 loaves.
