    Sourdough Bread

    List of Ingredients




    Starter:

    1 pkg dry yeast
    2 cups warm water
    1/2 cup instant potato flakes
    1/2 cup sugar
    2 Tbsps salt

    Dissolve yeast in warm water, add remaining ingredients and stir well. Keep at room temperature for 24 hours. Place in refrigerator 3 to 5 days. Take out of refrigerator and feed with the following:
    Feed:

    1/2 cup sugar
    1 cup warm water
    1 Tbsps instant potato flakes

    Combine ingredients. Let stand all day at room temperature 8 to 10 hours. Take out 1 cup to use in making bread. Return to refrigerator the remaining starter and feed every 3 to 5 days as before.
    To Make Bread:

    6 cups flour
    1/2 to 3/4 cup sugar

    Mix together. In another container mix 1 1/2 cups warm water, 1/2 cup vegetable oil, 1 cup starter. Add to dry ingredients; stir to mix well. Cover with wax paper and then a cloth on top of it. Let set all night in a warm place. Turn onto a well floured surface. Form into 2 loaves. Place in greased pans and let rise for 3 hours.
    Bake at 350° for 35 minutes. Brush melted butter on top. Remove from pans after 15 minutes and finish cooling on racks.
