Yeast Cornbread

1 cup yellow cornmeal
3/4 cup sugar
3/4 cup margarine or butter
1 teaspoon salt
1 cup milk, scalded and still hot
1 cake yeast, dissolved in 1 cup warm water
2 eggs, well beaten
6 cups flour
Place cornmeal, sugar, butter and salt in a large bowl. Add the hot milk. When the cornmeal mixture is lukewarm, add the yeast, eggs and flour. Mix thoroughly. Knead 5 minutes or so until smooth. Place in greased bowl, turning once to grease both sides of dough. Cover with a cloth and let rise in a warm place 1 1/2 to 2 hours until doubled. Punch dough down and make into 2 loaves. Place the loaves in greased 9x5x3-inch loaf pans. Cover and let rise again until double in a warm place. Preheat oven to 350 degrees. Bake for 45 minutes. When done remove loaves from pans and brush with melted butter. Makes 2 loaves.
