Heat the oven to 350 degrees. In a large bowl, combine 3/4 cup firmly packed brown sugar and 1/2 cup 60-percent vegetable oil spread with no trans fat. Beat until creamy. Add 1 egg and 1 teaspoon vanilla, and beat well. Add 1 1/4 cups mashed ripe bananas; beat well. Combine 1 cup all-purpose flour and 2/3 cup whole-wheat flour and add to sugar mixture along with 2 teaspoons pumpkin pie spice, 1/2 teaspoon baking soda and 1/2 teaspoon salt. Add 2 cups uncooked oats. Mix until blended.
Drop heaping tablespoons 2 inches apart onto ungreased cookie sheets and spread into 2 1/2-inch circles. Bake 10 to 12 minutes. Remove to wire rack; cool. Spread 2 teaspoons of peanut butter on one cookie and press a second cookie over the peanut butter.
Makes 24 sandwiches.
