    Mountain Dew Cake

    List of Ingredients




    1 package (18.25 ounces) lemon or orange cake mix
    1 package (3.4 ounces) instant vanilla pudding mix
    1 cup vegetable oil
    4 eggs, beaten
    10 ounces Mountain Dew or other lemon-lime-flavored carbonated soft drink
    1 can (20 ounces) crushed pineapple, drained
    1 c. granulated sugar
    3 tablespoons cornstarch
    1/4 cup butter
    1 cup flaked coconut

    Preheat oven to 350 degrees. Grease and flour a 13x9-inch pan. In a large bowl, combine cake mix, pudding mix, oil, eggs and soft drink. Mix until all ingredients are moistened. Pour into prepared 13x9-inch pan and bake at 350 degrees for 30-35 minutes. Cool completely.

    To make the topping: In a saucepan, combine pineapple and juice, sugar and cornstarch. Bring to a boil and cook, stirring constantly, until thick. Remove from heat. Add butter and coconut. Spread evenly over cake.
