    1 18-ounce package yellow (or white) cake mix

    Flour

    1 package (4-serving size) pistachio pudding mix

    1 cup water

    1/2 cup cooking oil

    1 tablespoon mayonnaise

    3 eggs

    3/4 cup chopped pecans

    Pistachio frosting (recipe follows)


    Preheat oven to 350.

    Place dry cake mix in large bowl of mixer. Add amount of flour specified on box for high-altitude baking. Stir in dry pudding mix. On low speed of mixer, blend in water, oil and mayonnaise. Add eggs, one at a time, beating well after each addition and scraping down sides of bowl frequently. Fold in pecans. Divide batter among three 9-inch cake pans. Bake for about 30 minutes or until a wooden pick inserted in center comes out clean. Cool and frost. Makes one 3-layer cake.

    To make frosting, combine 2 1-ounce packets of Dream Whip with one 4-serving-size package of pistachio pudding mix. Gradually add 1 1/2 cups milk, beating until smooth and thickened. Keep refrigerated.
