List of Ingredients
Crust:
1/3 c sugar
1/2 c melted butter, unsalted
1 c graham cracker crumbs
mix all ingred. together. Place mixture into a 9" spring-form pan. Chill crust.
Filling:
1/2 c chopped pecans
3/4 oz lemon juice
4 TBS vanilla
1/2 lb powdered sugar
3/4 lb unsalted butter, softened
3 lbs cream cheese, room temp
Using a kitchen Aid mixer, whip butter until smooth with the paddle. Add cream cheese and mix thoroughly. Scrape sides of bowl. Add powdered sugar slowly while mixer is on slow spped. Add remainig filling ingredients. Mix until all is incorporated, scraping the sides.
Sauce:
1 pkg. frozen strawberries with sugar
Thaw strawberries; save the liquid. Blend in a blender with all the liquid. Keep refrigerated.
Assembling:
When crust is firm, place cream cheese mix on top, smooth out and level. Refrigerate until firm, approx. 4 hours. Remove from spring-form pan and cut with a hot, wet knife. Serve with strawberry sauce. Serves 10Recipe
