1 package yellow cake mix (for 2-layer cake)
3.4-ounce package instant vanilla pudding
8 ounces sour cream
1/2 cup corn or vegetable oil
4 eggs
6-ounce package chocolate chips
Heat oven to 350 degrees. Grease a 10-inch bundt pan, and set aside.
With an electric mixer set at medium speed, beat together cake mix, vanilla pudding, sour cream, oil and eggs for 3minutes. Stir in chocolate chips by hand.
Pour batter into tube pan. Bake 1hour, or until cake tests done.
Serves 12 to 16.
Variations:
there are several versions of this basic recipe using butterscotch chips and mini-chocolate chips and only 1 egg, to reduce the cholesterol A favorite tip is to dust the greased bundt pan with sugar to prevent the cake from sticking. The sugar will form a yummy crisp crust and the cake will slide easily out of the pan.
Chocolate-chip tube cake
Marshmallows make this kid-friendly, and the lemon flavor is a nice touch.
1 package lemon or yellow cake mix (for 2-layer cake)
1 cup oil
8 ounces sour cream
3.4-ounce package vanilla instant pudding mix
4 eggs
1 cup chopped nuts
1 cup chocolate chips
1 cup miniature marshmallows
Bread crumbs or sugar as needed
Heat oven to 350 degrees. Grease a 10-inch tube pan with oil and dust lightly with fine bread crumbs. Set aside.
Mix the cake mix, oil, sour cream, vanilla pudding and eggs on low speed until batter is creamy, about 3minutes. By hand, stir in nuts, chocolate chips and miniature marshmallows.
Pour batter into pan. Bake for 1 hour or until toothpick inserted in the center comes out clean.
Serves 12 to 16.
More chocolate-chip tube cake
1 chocolate cake mix (Swiss chocolate, devil's food, German chocolate, etc.), (for 2-layer cake)
2 3.4-ounce packages instant chocolate pudding
1/2 cup oil
1/2 cup water
4 eggs
8 ounces sour cream
6-ounce package semi-sweet chocolate chips
1 cup (6 ounces), or to taste, melted semi-sweet or white chocolate
Whipped cream
Chocolate curls for topping (optional)
Heat oven to 350 degrees. Grease a bundt or tube pan and set aside. Mix together chocolate cake mix, instant chocolate pudding, oil, water, eggs and sour cream until batter is creamy. Stir in chocolate chips.
Pour batter into prepared pan. Bake 1 hour. Remove from oven; let sit 10 minutes and remove from pan to cake plate. Drizzle with melted semi-sweet chocolate or white chocolate if desired. Serve with dollop of whipped cream and chocolate curls.
Makes 16 servings.
