SOUTHWEST CHOCOLATE PEANUT BUTTER FUDGE
List of Ingredients
2 teaspoons butter
2 jalapeno peppers, finely chopped
2 cups sugar
1 cup firmly packed light brown sugar
1 (12-ounce) can evaporated milk
1/2 teaspoon salt
3 cups miniature marshmallows
3/4 cup creamy peanut butter
1 cup (6 ounces) semi-sweet
chocolate morsels
1 teaspoon vanilla extract
2 to 4 dashes hot sauce (optional)
Recipe
Melt butter in a small skillet over medium heat. Add peppers and saute 3 to 4 minutes or until tender. Let cool. Combine sugar, milk and salt in a large, heavy saucepan. Bring to a boil over medium heat, stirring constantly until sugar melts. Boil, uncovered, 5 minutes (do not stir). Remove from heat. Add marshmallows, peanut butter and chocolate morsels; stir until mixture is smooth and thickened. Stir in jalapenos and hot sauce, if desired. Spread fudge mixture immediately into a buttered 13 x 9-inch baking pan. Cover with plastic wrap, and refrigerate 3 hours or until firm. Cut into 1-inch squares. Yield: About 10 dozen pieces
