Lemon Spiced Bean Pickle

Recipe Introduction
Great with cold meats or on a relish tray. Also good as a 3 bean salad(recipe follows). Pack the beans into wide-mouth jars placed on their sides.
List of Ingredients
1 lb green beans
1 lb yellow beans
2 1/2 c cider vinegar
1 1/4 c water
1 Tbs pickling salt
1 Tbs sugar
1 tbs pickling spice
3 strips lemon rind
Wash and trim beans into 4-inch lengths to fit into jars. Combine vinegar, water, salt and sugar in a med. pan and bring to a boil over high heat. Add beans, cover and return to a boil; boil for 1 min. Remove from heat and drain, reserving liquid. Return liquid to pan and bring to a boil. Remove hot jars from canner and place 1 tsp of the pickling spice and 1 strip of lemon rind into each jar. Pack in beans and pour boiling liquid into jars to within 1/2 inch of rim. Process 10 min. for pint jars. makes 3 pint jars.
Easy Three Bean Salad
A quick salad to serve with BBQ or cold meats.
In a med. bowl, combine 1 c drained Lemon Spiced Bean Pickle,( cut into small pieces, reserve brine); 1/2 c. each of : diced celery, drained kidney beans, and a 1/4 c. finely chopped red onion. Bring 1/2 c. of the brine drained from pickles, with 1 Tbs of sugar and 1 Tbs of olive oil to a boil. Pour over bean mixture, cover and refrigerate for several hours, stirring occasionally.
