    Mema fig jam

    List of Ingredients

    4 c figs
    2 c sugar
    1/4 c water
    Combine all ingredients in a large pot. Bring to a boil, lower heat and boil until it thickens

    I made them using
    17 cups of whole figs
    7 cups sugar
    1 cup water
    juice of one lemon
    1 tbs vanilla


    Wash figs, Cut off stems, and cover them with cold water for 20 minutes. Drain off water.
    In a large pot make a sugar syrup with the sugar,water, and lemon juice. Stirring until clear. Then add figs and vanilla. Bring to a boil and let it boil for a full minute, reduce heat and let it cook until it gets brown and thick. Stirring it frequently...it took about a hour and a half.
    Can Them in hot water bath for10 minutes. Made 8 pint jars.
