Pickled Baby Carrots w/ Oregano & Pepper

Recipe Introduction
Take advantage of those tiny peeled carrots to make this easy pickle.
List of Ingredients
3 Tbs finely chopped fresh oregano or 1 Tbs. dried
2 Tbs each: chopped sweet red and green pepper
1/4 tsp hot pepper flakes
2 small cloves garlic
1 lb peeled baby carrots
1 1/2 cups white vinegar
1/2 c sugar
1/3 c water
1 tsp pickling salt
Combine oregano, peppers and hot pepper flakes. Remove hot jars from canner and divide pepper mixture between them. Add 1 clove garlic to each jar and fill each with half the carrots leaving 1/2 inch head space. (there may be a few carrots left over)
Meanwhile, combine vinegar, sugar, water, and salt in a small pan and bring to a boil. Pour hot liquids over to carrots within 1/2 inch of rim. Process 15 min. for pint jars. Makes 2 pint jars.
