Canning strawberry lemonade lets you have this sure hit for a party at anytime of the year. Perfect for sipping on the porch on a hot summer day or to drink at a special event anytime whatever the season. Guaranteed to set the tone for any host and especially fun to give as a gift.

4 qts. strawberries, washed and hulled
3 qts. water
4 c. lemon juice
6 c. sugar
Puree strawberries in a blender, food processor or food mill. For a clearer lemonade, extract juice from strawberries using a juice extractor or cheesecloth. Place strawberry juice in an 8 qt. or larger pot. Add lemon juice, water and sugar. Place mixture over medium heat and heat to 165 F., stirring occasionally. Do not boil. Remove from heat and skim off foam with metal spoon. Quickly ladle hot juice into clean, hot qt. jars, leaving 1/2" head space. Put a clean canning lid on and tighten ring. Process in boiling water bath 15 minutes. Yield: 6 to 7 qts. This lemonade is very concentrated and water, lemonade, or soda maybe be added.
