Cabbage casserole

1 large cabbage, hand-chopped
2 onions, chopped
3 green onions, chopped
1 stalk celery, chopped
½ bell pepper, chopped
3 cloves garlic, minced
8 ounces Smith Creamery butter
7 slices bread, soaked in enough milk to moisten well
1 pint Smith Creamery cream
½ cup grated American or cheddar cheese or more
Salt and red pepper to taste
Italian bread crumbs
Parboil cabbage (do not fully cook) in salted water. Drain thoroughly and set aside.
Saute onions, green onions, celery, bell pepper and garlic in enough cooking oil to moisten the vegetables. Add the cabbage, butter, moistened bread, cream and cheese. Break apart the bread and stir well, seasoning to taste. Pour half the mixture into a casserole and top with bread crumbs; layer remaining cabbage and top with additional crumbs. Bake, uncovered at 350 degrees for about 30 minutes or until bubbly.
Note: This can be prepared ahead of time, placed in the refrigerator for a day or two and baked when ready to serve.
