    Vidalia Onion Shortcake

    1 Vidalia sweet onion, thinly sliced
    1/4 c. butter
    1 c. sour cream
    1 box 8 1/4 oz. corn muffin mix
    1 egg, beaten
    1/3 c. milk
    1 sm. can creamed corn
    2 drops Tabasco Sauce
    1 tsp. dill
    1 c. grated sharp cheese

    Directions
    Sauté onion in butter. Cool. Add sour cream to muffin mix. Blend in egg with milk, creamed corn, Tabasco, salt, dill. Pour into greased 8×8 inch pan. Sprinkle 1/2 c. cheese on top. Pat onion mixture on top. Sprinkle with remaining cheese. Bake uncovered at 425° for 25 minutes.
