9 x 12 pan
Preheat oven to 275ºF
2 c. unsweetened dessicated coconut
1½ c. rolled oats
1½ c. Thompson raisins
1¼ c. sesame seeds
1 c. unsalted sunflower seeds
½ c. chopped dried apricots (or other dried fruits)
¾ c. unsalted peanuts
½ tsp. salt
1 c. honey
1 tsp. vanilla
¼ c. peanut butter
Preparation
In a small bowl, stir together honey, vanilla and peanut butter. In a large bowl, combine all other ingredients. Add the dry and wet ingredients to each other and blend thoroughly (use your hands).
Pack into a lightly greased 9 x 12 non stick pan. (½ recipe: 8 x 8) Press down evenly and smooth top with the back of a spoon. Place pan on a cookie sheet and bake at 275ºF for 30 minutes or until barely tinged with gold.
Chill several hours before cutting into squares.
