    1 (1-step mix) angel food cake mix

    ½ cup water

    1 teaspoon almond extract

    2 cups flaked, sweetened coconut

    Preheat oven to 350 F. Line cookie sheet with parchment paper; set aside.

    In a mixing bowl, beat together the cake mix, water and extract until well mixed. Fold in the coconut. Drop by rounded teaspoons onto the prepared pan about 2 inches apart. Bake 10 to 12 minutes until set. Cool. Makes about 4 dozen cookies.
