Oatmeal Cranberry Cookies

2 2/3 sticks butter, melted
1 1/3 cups packed brown sugar
1 cup sugar
3 large eggs, slightly beaten
1 tablespoon vanilla
1 1/3 teaspoons baking soda
1 1/3 teaspoons ground cinnamon
2/3 teaspoon salt
3 cups flour
4 cups old-fashioned oatmeal
1 2/3 cups dried cranberries
Butter baking sheets or line with parchment paper. Preheat oven to 350 degrees. In large bowl, blend butter, brown sugar and sugar together with wooden spoon. Stir in eggs and vanilla. Combine baking soda, cinnamon and salt together with part of the flour and stir into ingredients in bowl along with remaining flour and oatmeal. Stir in cranberries. (Dough can be refrigerated or even frozen at this point.)
Shape cookies into 2-inch balls (about 21/2 ounces each). (Cookies can be made smaller, if desired.) Place on prepared baking sheets, leaving room for cookies to spread. Flatten each cookie slightly with wet spoon. Place on middle rack and bake until lightly browned and slightly firm to the touch, about 15-20 minutes. Remove from oven and transfer with metal spatula to wire rack to cool. (Recipe can be doubled or tripled.)
Makes about 2 1/2 to 3 dozen large cookies.
