ROOT BEER COOKIES
List of Ingredients
1 cup brown sugar, packed
1/2 cup margarine , soft
1 egg
1/4 cup buttermilk
1 teaspoon root beer extract
1 3/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Root Beer Glaze - recipe follows
Recipe
Mix brown sugar, margarine and egg until fluffy. Stir in the buttermilk and root beer extract. Add the flour, baking soda and salt. Mix until smooth. Cover and refrigerate at least 1 hour. Preheat oven to 400*F. Drop dough by rounded teaspoonful onto a greased cookie sheet. Bake 8-10 minutes. Cool and then glaze.
Glaze for Root Beer Cookies~ 2 cups powdered sugar 1/3 cup margarine - softened 1 1/2 teaspoons root beer extract 2 tablespoons hot water
Mix powdered sugar and margarine. Stir in root beer extract and hot water. Mix until smooth. Ice cookies.
