½ cup powdered sugar
¾ cup (1 ½ sticks) unsalted butter
½ teaspoon salt (extra-fine preferred; Diamond Crystal is one brand, or whirl regular salt in a miniprocessor)
1½ teaspoons vanilla extract
½ cup cornstarch
1 cup unbleached flour
Directions:
Preheat oven to 300 F. Lightly grease (or line with parchment) two baking sheets.
In a medium mixing bowl, cream together sugar, butter, salt and vanilla. Add the cornstarch and flour, stirring to make a cohesive dough. Drop the dough by the tablespoonful onto the prepared baking sheets.
Bake the cookies for 25 minutes, until they're light golden brown. Remove them from the oven, let cool for 5 minutes on the baking sheet, then transfer to a rack to cool. Makes about 20 cookies.
