Zucchini Cookies

1/2 cup shortening
1/2 cup brown sugar, packed
1/2 cup granulated sugar
1 egg
1 cup zucchini, unpeeled, grated
1 teaspoon baking soda
2 cups flour
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon cloves
1 cup raisins
1/2 cup nuts, chopped
Cream shortening and sugars together. Beat in egg. Add zucchini.
Combine baking soda, flour, salt, nutmeg, cinnamon and cloves and add to the creamed mixture. Stir in raisins and nuts.
Drop by teaspoonfuls onto a greased cookie sheet. Bake at 350 degrees for 15 minutes or until slightly browned.
Makes about 3 dozen cookies.
Recipe can be doubled and cookies frozen.
