    BANANAS FOSTER BREAD PUDDING

    4 cups white bread, crust removed, cut into 1-inch dice
    2 ounces melted butter
    1 1/2 cups heavy cream
    3/4 cup egg yolks (about 8 yolks)
    1 cup sugar, divided
    1 ripe banana, mashed
    1 tablespoon vanilla extract
    1 teaspoon salt
    1 teaspoon ground cinnamon
    1 ounce Jack Daniel's Whiskey

    Directions:

    Place bread on baking sheet, drizzle with melted butter and 1/4 cup of sugar. Bake in preheated 400 degree oven until golden brown. Remove and allow to cool. Turn oven down to 350 degrees.

    In a large bowl, combine all other ingredients and the rest of the sugar ( 3/4 cup), and mix well. Toss bread into mixture, allowing bread to soak for at least 20 minutes. Coat the bottom and sides of a medium baking dish with butter and sugar, or use nonstick cooking spray. Add bread mixture to baking dish and cover with foil.

    Create a double boiler for the oven. Do this by placing the medium baking dish inside a larger baking dish and add enough water in the larger dish to fill 1/4 of it. It is critical to use a double boiler in the recipe to keep the bread pudding moist.

    Bake at 350 degrees for 30 minutes. Remove foil and bake for an additional 5 minutes. Remove and cool.

    Cut into 4-inch square portions and serve with caramel or vanilla ice cream.

    Serves 6.
