    You can substitute fresh strawberries for the blueberries. Or try any type of pie filling. Also consider using some extra whipped topping and fresh fruit for garnish.

    List of Ingredients







    Ingredients
    4 cups (2 pounds) blueberries (fresh or frozen)

    1 cup sugar

    1 cup water

    1/4 cup lemon juice

    1/4 cup cornstarch

    2 cups flour

    1 cup chopped pecans

    2 sticks butter, melted

    8 ounces cream cheese

    1 box confectioner's sugar

    12 ounces Cool Whip


    The Process Preheat oven to 350 degrees.

    Mix blueberries, sugar, water, lemon juice and cornstarch in a saucepan and bring to a boil, stirring constantly. Reduce heat and cook until thick and clear, stirring occasionally, cool. Reserve.

    In a medium bowl, combine flour, pecans and butter and spread in a 9-by-13-inch pan. Bake for 20 minutes. Cool completely.

    Beat together cream cheese and sugar; fold in Cool Whip. Spread over cooled crust.

    Pour blueberry mixture on top. Refrigerate at least 4 hours or preferably overnight.


    Makes 12 servings.
