Banana Burrito

2 tablespoons smooth peanut butter
1 flour tortilla (10-inch diameter)
1/3 cup miniature chocolate chips
1 banana, peeled
Vegetable oil, for deep-frying.
2 scoops vanilla ice cream
Chocolate syrup
Spread peanut butter over the tortilla completely. Sprinkle chocolate chips over the peanut butter, leaving 2 inches around the edge covered with just peanut butter. Place banana at bottom of the tortilla and roll like a burrito.
Heat oil in a large pot or deep fryer until hot. Submerge banana burrito in oil and deep-fry until golden brown on all sides.
To serve, cut in half and top with ice cream. Drizzle with chocolate syrup.
