    Eclair Ring

    List of Ingredients






    1 C Water
    1 Stick Margarine
    1 C Flour
    Dash of Salt
    4 eggs
    2 sm. Packages instant vanilla pudding
    1 1/2 C. Milk
    1 1/2 C. Heavy Cream
    1 Jar Chocolate Sundae Topping (Smuckers is good!)

    Heat oven to 425 degrees

    Place the Water and Butter in a saucepan, heat until mixture boils. At that point, remove from heat and mix in flour and salt until it forms a ball and pulls away from the pan. Now, mix in the eggs one at a time, mix completely after each egg has been added.

    Spread the mixture on a square cookie sheet in a ring fashion.

    Put eclair ring in the oven and turn the oven temperature down to 400 degrees. Bake for 30 minutes. Turn off the oven and leave the ring in the hot oven to bake an additional 20 minutes.

    Remove from oven and allow to cool.

    Meanwhile, mix the pudding, milk and heavy cream together. Beat until it is the consistency of a thick pudding.

    Cut the ring down the middle so you have a top and a bottom piece. Spread the pudding mixture in the ring and put the top back on.

    When ready to serve, frost with the chocolate topping!
