Cajun Spring Rolls

1 lb Cajun Andouille Sausage or other spicy blend, ground
1/2 cup onion , chopped
1/2 cup celery, chopped fine
1/2 cup green bell pepper, chopped fine
1 cup cabbage, chopped small
1 cup frozen leaf spinach, thawed and drained
2 tsp fresh parsley, chopped
1 tbs garlic, chopped fine
1 cup monterey jack cheese, shredded
12 eggroll wrappers - large 7" sq.
1 egg yolk w/1 tsp water, beaten
1 jar sweet & sour sauce
Cook ground sausage in skillet over fire. In large mixing bowl, combine sausage, cabbage, garlic, onion, celery, parsley, green pepper, spinach and jack cheese. Place 2 heaping tablespoons of sausage mixture just below center of each eggroll wrapper. Roll up, folding in sides before rolling all the way to the top. Brush top corner with egg yolk mixture, and continue rolling to complete seal.
Deep fry in peanut oil for approximately 2 to 4 minutes, turning occasionally until golden brown. Serve with sweet & sour sauce for dipping.
